A surprising egg

I sometimes think I was supposed to live on a farm. In reality, I love the idea of living on a farm. I have images of “Little House on the Prairie” meets “Field of Dreams”. In reality I think life on a farm is more work than I am willing to do on a daily basis. I have much respect for our farmers.

I thought my first farm fresh egg would be gathered by me and then taken home to cook. Little did I know it would be at a Chef’s Table dining experience.

I was surprised with a last minute invitation to join some wonderful friend’s of my parents at a Chef’s Table dinner at the fancy restaurant in their community. The large table sat off to the side of the kitchen. We were able to see and smell all the restaurant dishes for the evening.

Our six course meal included a few surprise courses, appetizers, palate cleansers and an amuse bouche. I knew this would be one of my most exquisite dining experiences. As the chef presented each offering I imagined being a guest judge on Top Chef. I determined I would eat everything presented. I didn’t care what it was- I was not going to let my preconceived food prejudices prevent me from enjoying this fine cuisine.

Imagine my surprise when I learned our second course was grilled asparagus, crispy prosciutto, toasted walnut bread with a poached farm egg. When the plate was presented the chef said “a farm fresh egg”! I asked and the egg had come from a chicken the same day. The egg was poached in the shell in a sous vide at 63 degrees Celsius for an hour. When they cracked the egg open, a perfectly poached egg came out.

The color was vibrant! The egg was creamy and the perfect accompaniment to the asparagus… who knew!

My fresh egg experience will not end with this egg. I see a yummy fresh egg in my breakfast future! #17✔
